Made khachapuri for the first time yesterday! Overall it was quite delicious and was actually surprised it turned out as well as it did. I’ve never even made bread before… It’s not easy to find the correct cheese where I live (Canada) so I had to use mozzarella and feta, along with something called creme fraiche. By the time it was ready to bake I was rather drunken so I cooked the egg too long…still plenty of yolk tho. Of course it wasn’t as great as the offerings I’ve had in the (sadly few) Georgian restaurants in Canada. I put cheese in the sides of the boat as I’ve experienced at one restaurant, I wonder if that is usual? Anyways, I am enamoured of your country, planned to visit this fall but unfortunately it didn’t pan out. Hopefully next year!

Is there any difference between that and adjarski khachapuri? That was one of my favorite items at a local Armenian restaurant.
